Juyondai [十四代] - Junmai Daiginjo 'Daigokujo-nama Banshu Yamada-nishiki' 大極上生 播州山田錦 1800ml Tokubetsu Junmai Tuna SteakTasting Note This 'Daigokujo' is a first press sake in the Tarudare style, offering melon and orchard fruit aroma with lively freshness of unpasteurised sake. The term 'Tarudare' refers to a traditional pressing method where the unfiltered mash is placed into perforated bags, laid flat and gently pressed from top to bottom with wooden board. Delicate mist of sake lee remains suspended in the liquid, adding depth and texture to the palate.
